Perfect Barbeque Steak

Perfect Steak at a barbeque is possible by following some basic steps.

1. Select you cut of Maine-Anjou beef such as rib-eye or porterhouse and allow it to come to room temperature just before cooking.

2. Have your hot plate medium - high to high temperature

3. Oil your steak and not the hot plate, with olive oil, to prevent it sticking

4. Season one side of the steak just before cooking as the salt can draw out juices from the steak. Cook the seasoned side first to seal in the flavour. Season the uncooked side just before turning over the steak.

5. Turn the steak only once: Rare 2-3 minutes per side / Medium 3-4 minutes each side / Well done 4-5 minutes each side for a 2cm steak. I encourage you to try your Maine-Anjou steak rare for the flavour and tenderness are amazing at this level.

6. Rest the steak up to 5 minutes to allow the muscle fibres to relax, therefore improving tenderness and allow the juices to redistribute themselves.
